Have you ever found yourself with so many ripe bananas that you don’t know what to do with? If after giving away to neighbours and stuffing your stomach there’s still stock left over, why not bake a tasty banana cake? Or even better- several cakes! There’s no such thing as too much cake.

Ingredients

125g margarine
1 ripe banana
1/2 cup sugar
1/2 cup milk
1 1/2 cups all-purpose flour

Makes one cake. Serves 4.

Method

Pour the milk into a bowl, add the flour and mix lightly.
In a saucepan, melt the margarine and sugar over medium heat.
Add this to the flour mixture and stir thoroughly.
Add the banana and mash until smooth.
Crack the egg, add to the other ingredients and mix well.
Preheat the oven at 170°C for 15 minutes.
Pour the batter into a greased baking pan.
Bake at 170°C for 40 minutes or until done.

Tips

To test whether the cake is done, insert a skewer in the middle then pull it out. If it comes out clean the cake is ready.
Use a baking tin that isn’t too deep for the amount of batter. Otherwise only the outside will bake leaving you with a soggy centre.
