2 tsp vanilla essence
1 tsp baking soda
1/2 tsp salt

Makes 12 chocolate cookies

  • Mix the margarine and sugar in a bowl until light and fluffy.
  • Add the egg and mix completely.
  • Combine the flour, chocolate essence/ powder, vanilla essence, baking soda and salt.
  • Stir thoroughly.
  • Add this to the other ingredients and blend until you achieve a thick but workable consistency.
  • Using a spoon, drop the mixture onto an ungreased baking sheet.
  • Preheat your oven to 180 C for a few minutes.
  • Place baking sheet in the oven, bake for 10 minutes or until slightly firm.
  • Remove the sheet from the oven and allow cookies to cool.
  • Serve with your favourite drink. Enjoy!

  • Do not overbake, since the aim is to have chewy cookies. They will puff while baking and flatten upon cooling.
  • If any remain, store them in a sealed plastic container to preserve freshness.
