Breakfast and tea times can get monotonous if you take the same thing every time. How about changing things up? Apart from cookies, another delicious pastry you could try is rock cakes. They are simple to prepare and as always you can tweak the recipe to suit your preference.

Ingredients
250g self-raising flour
4 tbsp sugar
¼ kg margarine
1tsp baking powder
1tsp vanilla essence
¼ cup milk
1 egg
Makes 12 cakes

Method

  • Preheat the oven to 180 C
  • Mix the flour, sugar and baking powder.
  • Add the margarine and rub it in until the mixture resembles bread crumbs.
  • In a separate bowl, beat the egg and add milk and vanilla essence.
  • Add this to the flour mixture, mix gently until you achieve a sticky consistency.
  • Prepare a baking sheet by greasing and dusting it with a little flour.
  • Spoon the dough onto the sheet, leaving enough space for spreading as the cakes bake.
  • Bake for 15 minutes or until golden brown and crusty.
  • Remove from the oven and set aside for 5 minutes to cool.
  • Serve with your favourite tea or coffee. Enjoy.

Tips

  • You can make this delicacy in different flavours. Coconut and banana rock cakes are created by adding mashed banana and dessicated coconut at the appropriate stage. Cinnamon and raisins add a spicy punch.
