Ingredients:
Vanilla Cupcakes
1 cup (240ml) milk
1/2 cup (120ml) vegetable oil
3 tsp baking powder
1 tbsp vanilla extract
2 1/2 cups (325g) all-purpose flour
2 cups (414g) sugar
1 tsp salt
2 large eggs
1 cup (240ml) water
Vanilla Frosting
1/2 cup (112g) salted butter, room temperature
1/2 cup (95g) shortening
4 cups (460g) powdered sugar
1 1/2 tsp vanilla extract
2-3 tbsp (30-45ml) water or milk
Method
- Preheat the oven to 176 degrees Celsius.
- Prepare a cupcake pan with liners.
- Put the vegetable oil, milk, eggs and vanilla extract into a bowl and mix thoroughly.
- Add the mixture to the dry ingredients, beat until well mixed.
- Add water a little at a time to the batter, stir slowly until well combined. The end result should be very thin batter.
- Pour into the cupcake liners until about halfway.
- Bake for 15 minutes or until a toothpick inserted comes out clean or with a few crumbs.
- Remove from the oven and allow to cool for 2 minutes, then place the vanilla cupcakes onto a cooling rack to cool completely.
- To prepare the frosting, combine the shortening and butter in a bowl and mix until smooth.
- Add the sugar and mix completely.
- Add the powdered sugar and mix.
- Add water and milk as needed, stir until smooth.
- Pipe the frosting onto the cupcakes. Enjoy!
