Vanilla cupcakes

Cakes are some of the easiest foods to prepare at home, once you get the hang of it. And they’re very tasty as well! The best part of home baking is you get to control the quantities of ingredients used, so you can indulge your cravings in a healthy way. Follow the directions below for some decadent, moist vanilla cupcakes.


Vanilla Cupcakes

1 cup (240ml) milk
1/2 cup (120ml) vegetable oil
3 tsp baking powder
1 tbsp vanilla extract
2 1/2 cups (325g) all-purpose flour
2 cups (414g) sugar
1 tsp salt
2 large eggs
1 cup (240ml) water

Vanilla Frosting

1/2 cup (112g) salted butter, room temperature
1/2 cup (95g) shortening
4 cups (460g) powdered sugar
1 1/2 tsp vanilla extract
2-3 tbsp (30-45ml) water or milk


  • Preheat the oven to 176 degrees Celsius.
  • Prepare a cupcake pan with liners.
  • Put the vegetable oil, milk, eggs and vanilla extract into a bowl and mix thoroughly.
  • Add the mixture to the dry ingredients, beat until well mixed.
  • Add water a little at a time to the batter, stir slowly until well combined. The end result should be very thin batter.
  • Pour into the cupcake liners until about halfway.
  • Bake for 15 minutes or until a toothpick inserted comes out clean or with a few crumbs.
  • Remove from the oven and allow to cool for 2 minutes, then place the vanilla cupcakes onto a cooling rack to cool completely.
  • To prepare the frosting, combine the shortening and butter in a bowl and mix until smooth.
  • Add the sugar and mix completely.
  • Add the powdered sugar and mix.
  • Add water and milk as needed, stir until smooth.
  • Pipe the frosting onto the cupcakes. Enjoy!
