Potatoes are beloved the world over due to their versatility in being converted into various comfort foods, like fries, potato chips (crisps), viazi karai, bhajias and many more. This week we look at another tantalizing option: oven baked potatoes.
Ingredients
3 medium sized potatoes
½ tbsp freshly ground black pepper
1 ½ tsp salt
½ cup shredded Cheddar cheese (optional)
3 tsp olive oil
2 ½ tsp butter
Method
- Preheat the oven to 150 degrees C.
- Wash the potatoes then wipe them dry.
- Scrub the potatoes, and pierce the skin several times with a knife or fork. Rub a generous amount of olive oil all over the skin. Follow through with salt.
- Place the potatoes in the oven on an ungreased baking tray and bake for 90 minutes, or until slightly soft and golden brown.
- Slice the potatoes into halves, serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top (optional). Other alternative toppings are chives, sour cream and butter.
Tips
- You can also wrap the potatoes in foil before placing them into the oven. This gives softer skin, allows the potatoes to stay warm in their foil jackets if you’re still working on the topping or need to save a potato for a snack later.
- Microwaving is also possible, but you’ll need to turn the potatoes over every 5 minutes.
