Fries are a favourite comfort food the world over. There’s just something special about digging into a hot serving of chips. For an even more exciting meal, try out this simple masala fries recipe instead of eating plain chips.
Ingredients
1 kg potatoes, peeled and cut into strips
vegetable oil
1 chopped green chillies
1/2 tsp spanish paprika OR tandoori masala
1/4 tsp garlic paste
Salt to taste
juice of half a lemon
2-3 tbsp tomato sauce
1 tsp chilli powder
1/4 tsp cumin powder
chopped coriander
Serves 6
Method
- To achieve chips that are crunchy outside and soft inside, fry them twice. Frythem for a few minutes, drain them from the oil, re-heat the oil and fry them again.
- In a pan, heat the margarine/butter. When melted, turn off the heat, add the spanish paprika or tandoori masala, red chilli powder, salt, garlic paste, tomato paste and tomato sauce (or chilli sauce if you prefer them extra hot).
- Add the cumin powder, turmeric and chopped chillies.
- Turn on the heat again. Gently simmer these ingredients until well combined and starting to thicken.
- Turn the heat to low, and add in your chips. Toss them around so that the masala covers them properly.
- When fully done, turn off the heat then squeeze in half a lemon and garnish with coriander.
- Serve the masala fries with an accompaniment of your choice, for instance chicken and kachumbari. Enjoy!
Tips
- If you’re keen on healthy eating options, rinse the potato strips a couple of times to get rid of excess starch.
- Line a dish with kitchen towels to absorb excess oil from the fries.
