Matoke is a beloved dish whose origin is Uganda. It is made from the starchy variety of bananas. Try it with some peanut sauce for a tantalizing meal!
Ingredients
a) For the matoke
2 onions
1 tsp cumin
1 tsp turmeric
1 carrot
1 cup stock
Salt to taste
10 peeled and cut green bananas
b) For the peanut sauce
2 tomatoes
2 garlic cloves
3 handfuls of roasted peanuts
1 onion
Method
a) For the matoke
- Chop the onions and grate the carrot.
- Fry the onions for about one minute then add cumin and turmeric.
- When the onions have softened, add the grated carrot.
- Add the stock and salt, stir gently then add the bananas.
- Let them boil on low heat until they’re soft through and through. If the water dries out before the bananas are ready, add more and continue boiling.
b) For the peanut sauce
- Grind the peanuts very finely. You can use a pestle and mortar first before putting them into a blender to make it easier for the machine. Add water as you’re blending to come up with a fine paste.
- Scoop two tablespoons of olive oil into a pot.
- Turn on the heat, add garlic and a little water.
- When the garlic turns milky, scoop the peanut paste into the pot and stir gently.
- In a separate pot, fry the onions until golden brown then add the tomatoes and salt.
- When the tomatoes soften add the peanut sauce and stir.
- Add some water, stir, cover and simmer on low heat.
- Stir often to keep it from sticking to the bottom of the pot.
- Let it simmer for a few minutes then pour into a bowl.
- Your matoke and sauce are ready to serve. Enjoy!
