mandazi

Mandazi, also referred to as African doughnuts are a widely loved delicacy. They are fairly easy to prepare once you get the hang of it.

Ingredients
3 cups all-purpose flour
1 tsp baking powder
1tsp cinnamon powder
3 tsp cardamom powder
1/4 cup sugar
1 cup water
1 egg

  • Method
    Sieve all the dry ingredients into a bowl.
  • Mix all the wet ingredients in a separate bowl.
  • Rub the margarine with the dry ingredients.
  • Make a well in the flour, pour in the wet ingredients and knead. The dough should be firm but pliable.
  • Cover the dough with a kitchen cloth for one hour.
  • Roll the dough onto a clean, lightly floured surface. Cut into squares, rectangles or triangles.
  • Heat the oil and deep fry the mandazi. Use a pan that’s deep enough so that the oil doesn’t splash onto the cooker.
  • When the pieces turn brown on both sides, remove from heat and place in a serving bowl.
  • Serve with a beverage of your choice.

Tips

  • Line your serving bowl with a cloth or kitchen towels to absorb excess oil.
  • Make sure the oil is bubbling hot so that the mandazi cook in a minute or two.
