Mandazi, also referred to as African doughnuts are a widely loved delicacy. They are fairly easy to prepare once you get the hang of it.
Ingredients
3 cups all-purpose flour
1 tsp baking powder
1tsp cinnamon powder
3 tsp cardamom powder
1/4 cup sugar
1 cup water
1 egg
- Method
Sieve all the dry ingredients into a bowl. - Mix all the wet ingredients in a separate bowl.
- Rub the margarine with the dry ingredients.
- Make a well in the flour, pour in the wet ingredients and knead. The dough should be firm but pliable.
- Cover the dough with a kitchen cloth for one hour.
- Roll the dough onto a clean, lightly floured surface. Cut into squares, rectangles or triangles.
- Heat the oil and deep fry the mandazi. Use a pan that’s deep enough so that the oil doesn’t splash onto the cooker.
- When the pieces turn brown on both sides, remove from heat and place in a serving bowl.
- Serve with a beverage of your choice.
Tips
- Line your serving bowl with a cloth or kitchen towels to absorb excess oil.
- Make sure the oil is bubbling hot so that the mandazi cook in a minute or two.
