Cookies are a tasty comfort food, no doubt. More so home made ones, since you can customize recipes to fit your liking. If you’re looking for something different from the usual, peanut cookies are a good option.
Ingredients
1 cup flour
1 tsp baking powder
8 tbsp softened butter
1 egg
1/2 cup granulated sugar
1/2 cup light brown sugar
1 cup salted peanuts (peeled)
1/2 tsp vanilla extract
55 g semi-sweet chocolate, melted and cooled (optional)
Makes 30 cookies.
Method
- Preheat the oven to 175°C for around 10 minutes.
- Prepare a baking tray by spreading butter on the bottom and sides.
- In a bowl, cream the butter and sugars with an electric mixer until the mixture is light.
- Add the vanilla extract and egg. Beat well.
- Add the flour, baking powder, and peanuts until well blended.
- Drop rounded tablespoons of batter onto the baking sheet. Leave enough space for them to spread while baking.
- Bake for 10 minutes, or until the cookies are light brown.
- Set them aside to cool. Drizzle the melted chocolate over the peanut cookies once cool.
- Serve with your favourite beverage. Enjoy!
