Avocados are loved and hated in equal measure. The opposers view them as overhyped. However if you’re on the other side and are searching for more ways to enjoy the fruit, look no further.
As a Bread Spread
If you’re looking to ditch margarine, avocados make a great substitute. It’s not only tasty, but also healthy. Avocados are rich in healthy fats, fibre & 20 vitamins and minerals.
Cucumber Tomato Avocado Salad
Ingredients
2 avocados, diced
450g tomatoes
Juice of 1 medium lemon (about 2 tbsp)
1 English cucumber
¼ cup cilantro, chopped
½ medium red onion, sliced
2 tbsp extra virgin olive oil
⅛ tsp black pepper
1 tsp sea salt or ¾ tsp table salt
Method
- Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
- Drizzle with 2 tbsp olive oil and 2 tbsp lemon juice. Toss gently to combine.
- Just before serving, toss with 1 tsp sea salt and ⅛ tsp black pepper.
Egg and Avocado Salad on Toast
Ingredients
4 slices of hearty sandwich bread (about 3/4-inch thick), such as whole-wheat, peasant bread, sourdough, or multi-grain
6 hard-boiled eggs, peeled
2 avocados, halved and pitted
Freshly ground black pepper
1/4 cup thinly sliced scallions
1 clove garlic, peeled
3 tablespoons whole-milk plain Greek yogurt
1/4 cup plus 1 tbsp coarsely chopped fresh basil leaves, divided
1 tsp lemon juice
Salt to taste
Serves 4
Method
- Toast the bread.
- As the bread is toasting, cut the eggs into pieces and place into a bowl.
- Scoop the avocado flesh, add it to the bowl and mash together. The mixture should be chunky.
- Add the scallions, yogurt, lemon juice, a big pinch of salt, 1/4 cup of the basil, and a few grinds of pepper.
- Mix gently until well combined. Taste the mixture and adjust the seasonings if needed.
- Rub the garlic clove on one side of the bread slices.
- Scoop the salad onto the slices and spread evenly.
- Garnish with the remaining tablespoon of basil and serve. Enjoy!
