Ingredients
1 large onion
1 bunch coriander
3 garlic cloves
2 large tomatoes/ 450g tomato paste
1 1/2 cups rice
500g beef
3 tbsp pilau masala
2 carrots, cubed
1/2 green capsicum
Cooking oil as required
Salt to taste
Method
- Chop the beef into small pieces, put in a saucepan and boil until tender.
- In a separate pan, heat the cooking oil. Add the chopped onion and crushed garlic.
- Fry gently until the garlic turns brown.
- Add the diced capsicum and coriander, stir gently then follow with the carrots.
- Add the tomato paste. Use a little water to ensure the paste dissolves.
- Stir in the pilau masala.
- Add the meat, salt as desired. Add some water and let the meat cook for 5 minutes.
- By now the meat should have absorbed all the spices. Add the rice and 3 cups of hot water.
- Cover the pan, let the pilau cook on medium heat until all the water has evaporated.
- Serve with your favourite stew. Enjoy!
Tips
- To ensure the rice doesn’t stick to the bottom of the pan, keep stirring as it boils.
- Regulate the heat as needed so that the pilau doesn’t burn.
