Rice Dishes

Rice is one of the easiest dishes to prepare. As long as you have the correct ingredient ratios you’re good to go. However, boiled rice can get boring. If you’ve been searching for alternative rice dishes, look no further.

  1. Simple Fried Rice

Ingredients

3 cups boiled rice
1/2 cup diced onion
3 tbsp oil
1 tsp chili-garlic sauce
2 large eggs, lightly beaten
1/2 cup diced bell pepper
1 cup chopped cooked beef/ chicken
Chopped almonds (optional)
1/2 cup frozen sweet green peas
1/4 cup soy sauce
Sliced green onions (optional)

Method

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the eggs and gently stir for around 1 minute or until softly scrambled.
  • Remove eggs from the skillet, chop and set aside.
  • Heat 2 tablespoons oil in a skillet. Add the onions and bell pepper and stir-fry for 3 minutes.
  • Add chopped cooked beef/ chicken and peas, stir-fry for 2 minutes.
  • Add rice, soy sauce, and chili-garlic sauce. Stir-fry until thoroughly heated.
  • Stir in scrambled eggs then sprinkle with green onions and almonds if desired.

2. Sausage & Rice

This is one of the simplest rice dishes to make.

Ingredients

1 pack smoked sausage
100g quick-cooking brown rice
1 medium-size green bell pepper, chopped
1/2 tsp salt
1 small onion, chopped
1 cup chicken broth
1 garlic clove, minced
1/4 tsp pepper
Chopped fresh parsley to garnish

Method

  • Cut sausage into 1/2-inch slices. Sauté in a large nonstick skillet over medium-high heat for 8 -10 minutes or until lightly browned.
  • Remove sausage slices and place them on paper towels to absorb excess oil.
  • Add bell pepper, onion, and garlic to skillet, and sauté over medium-high heat 4 minutes or until tender.
  • Add the chicken broth. Keep stirring frequently to loosen particles from bottom of skillet. Allow the broth to boil.
  • Add rice, sausage, salt, and pepper to the skillet. Cook over medium-low heat for 5 minutes or until rice is tender.
  • Garnish with parsley if desired.
